A wave of anxiety threatens to paralyze you. You stare at the now paper-thin sheet of dough and it fades in and out of focus with your pounding heart. You need to come up with something fast or you're gonna flub this big time.

In a flurry of motion, you dump the sizzling contents of the ultra-wok into a bowl then flip it upside down, staining the bench underneath with a ring of grease. You carefully lift the dough sheet by its edges and drape it around the dome. A crescendo of hissing fills the air as it begins to cook through. In a minute, you will have something that approaches a flatbread.
